A Quick And Easy Birthday Cake from Scratch + A Specialty Cocktail

Although it's February we have been incredibly busy behind the camera, and giving keynote speeches all over the world. But, being busy is no excuse not to celebrate special birthdays! Even if we celebrate in a low key fashion, we have to take time out to make life events special. So this year I decided to have a small friends get together for Charles' birthday, and my special gift for both him and our guests was taking the time to make him a birthday cake and specialty cocktail from scratch.

Here is a quick and easy "from scratch" recipe that extremely easy to make

Amazing Chocolate Cake

PREP

Pre heat oven 350 Bake 30-35min 
Butter coat a springform pan *even if it says non stick trust me! 

Ingredients

1 3/4 All purpose flour 
1 teaspoon baking powder 
2 teaspoons baking soda 
3/4 Cup unsweet coco powder 
1 package dark chocolate instant pudding 
1 teaspoon kosher salt 
2 Cups granulated sugar
2 Teaspoons Vanilla extract 
1/2 cup vegetable oil 
1 cup strong black coffee 
1 cup milk
2 Eggs

Directions Part A (The Cake)

Sift all dry ingredients together 
Place wet ingredients in mixer and slowly add all of the sifted dry ingredients
Mix both wet and dry ingredients and scoop into the pre-buttered spring form pan

Bake at 350 until done, 30-40 min approximately... (Check with a wooden pick or fork in center. If pick comes out clean it's done if it has fudge on it keep it in keep checking every 5min)
Let cool completely 

Marshmallow Butter Cream Frosting (The Topping) 

Ingredients

7oz Jar Marshmallow cream  
2 Cups confectionary sugar 
1 Cup butter (Two Sticks)
1 teaspoon vanilla extract

Directions

Cream butter until light and fluffy in a mixer
Add marshmallow and vanilla 
Whip for 2 minutes in the mixer
Slowly add confectionary sugar to the mixer and mix

PRE MADE INGREDIENTS FOR THE TOPPING

Cherry Pie Filling 
Vanilla Pudding
Chocolate shavings - use veggie peeler and favorite chocolate bar 

Directions Part B

Layer the top of the cake with pudding, cherrie pie filling, and marshmallow buttercream 
Use chocolate shavings to go around the edging 
Reserve some cherries for top display 
Let set in refrigerator  2- 3 hours 

Last Tip... For those of us in a hurry!
Definitely butter the pan as shared. However, you can also use parchment paper as well, which is key if you don't have a lot of time to let the cake sit and cool for less than 3 hours.

Ice Cream Cake Martini 


2oz of Three Olives Cake Vodka 
1oz of Buttershots (* you can sub chocolate syrup if you like more chocolate flavor ) 
1 scoop of sugar free chocolate ice cream (Sugar Free Saves Some Calories)

Ice in a shaker add ingredients and then pour 
Top with chocolate Ready Whip, a cherry, and sprinkles to give it the final ice cream cake look!
